Grilled Ricotta Cheese

Ingredients
MORNING INGREDIENTS
- 2-3 Medium Sweet Potatoes
- 2-3 T Olive Oil
- Salt
EVENING INGREDIENTS
- 10 slices Hearty Sandwich Bread
- 1/2 cup Spreadable Margarine
- 4-5 Mozzarella Cheese Slices
- 10 slices Favorite Lunch Meat
- 1/3 cup Ricotta Cheese
- 2 T Parmesan Cheese
- 1 T Dry Oregano
- 8 slices Favorite Lunch Meat
Directions
MORNING DIRECTIONS

Cut sweet potatoes in half, length-wise.

Cover baking sheet with parchment paper or extra oil.

Cover all sides of potatoes with oil and place face-down on cookie sheet.

Sprinkle tops of potatoes with salt.

Place in oven and set oven on time-bake* to cook at 400 for 30 minutes, with the end time set for when you want to eat.
EVENING DIRECTIONS

Preheat griddle to low.

Spread one side of each bread slice with margarine.

Place half of bread, buttered-side down, on a griddle.

Top with mozzarella slices and lunch meat as it starts to cook.

Spread ricotta cheese on other half of bread (non-buttered side).

Place this bread on top of grilling sandwiches, (buttered-side up) and sprinkle with Parmesan cheese and oregano.

By the time you assemble the sandwiches, they should be ready to be flipped.

Add more Parmesan and oregano to other side of bread if desired.

Serve with sweet potatoes
