Malibu Chicken

  • 4 Boneless, Skinless Chicken Breasts
  • 1/2 cup Mayo
  • 3 T Mustard
  • 2 T Sugar
  • 1 cup Bread Crumbs
  • 4 Slices Lunch-Meat Ham
  • 4 Slices Provolone Cheese
  • Favorite Canned Or Frozen Vegetables
  1. Put mayo, mustard and sugar in crock pot and blend well with fork.
  2. Press chicken into mayo/mustard mixture and flip over to coat well.
  3. Arrange in crock pot in single layer.
  4. Turn on low 6-8 hours.
  1. Preheat oven to 400.
  2. Spread bread crumbs in a 9x13 pan.
  3. Take chicken breasts out of crock pot with a spatula trying not to let them break.
  4. Place up-side-down onto crumbs and press well, absorbing as many as you can.
  5. Flip it over and place on top of more crumbs, pressing down.
  6. Repeat for each chicken breast.
  7. Brush remaining crumbs under chicken.
  8. Place a slice of ham and cheese on each breast.
  9. Bake for 4-5 minutes to melt cheese.
  10. 10. In meantime, heat up vegetables in microwave.
  11. 11. Strain the sauce in the bottom of the crock pot and whisk with fork.
  12. 12. Drizzle this sauce generously over chicken.
  13. 13. Serve with vegetables on the side.
