Pork Carnitas

Ingredients
MORNING INGREDIENTS
- 2 lbs Boneless Pork Loin Roast
- ¼ cup Orange Juice
- 2 T Liquid Smoke
- 1 Bay Leaf
- 2 T Minced Onion
- ½ cup Cola
EVENING INGREDIENTS
- 3 T Brown Sugar
- 1 T Cumin
- 2 tsp Oregano
- 1 tsp Chili Powder
- 2 tsp Garlic Salt
- ½ tsp Smoked Paprika
- 2 T Lime Juice
- 8 small Corn Tortillas
- 1/2 cup Ranch Dressing
- 1/2 head Shredded lettuce
- Cherry tomatoes
Directions
MORNING DIRECTIONS

Place pork in crock pot.

Pour all other ingredients over roast.

Turn on low for 8-10 hours.
EVENING DIRECTIONS

Turn oven on to high broil.

Put pork on a baking sheet, remove undesired fat, cut every 2 inches or so and shred. 3. Place in oven for 5 minutes to partially crisp the meat.

While broiling, mix first 6 evening ingredients in a small bowl.

Shred lettuce. Sprinkle seasonings over meat.

Splash lime juice over meat.

Pour ½ cup or so of juice from crock pot over meat to moisten it up.

Place all on table and let everyone make their own carnitas.
