Ingredients
MORNING INGREDIENTS
  • 2 lbs Boneless Pork Loin Roast
  • ¼ cup Orange Juice
  • 2 T Liquid Smoke
  • 1 Bay Leaf
  • 2 T Minced Onion
  • ½ cup Cola
EVENING INGREDIENTS
  • 3 T Brown Sugar
  • 1 T Cumin
  • 2 tsp Oregano
  • 1 tsp Chili Powder
  • 2 tsp Garlic Salt
  • ½ tsp Smoked Paprika
  • 2 T Lime Juice
  • 8 small Corn Tortillas
  • 1/2 cup Ranch Dressing
  • 1/2 head Shredded lettuce
  • Cherry tomatoes
Directions
MORNING DIRECTIONS
  1. Place pork in crock pot.
  2. Pour all other ingredients over roast.
  3. Turn on low for 8-10 hours.
EVENING DIRECTIONS
  1. Turn oven on to high broil.
  2. Put pork on a baking sheet, remove undesired fat, cut every 2 inches or so and shred. 3. Place in oven for 5 minutes to partially crisp the meat.
  3. While broiling, mix first 6 evening ingredients in a small bowl.
  4. Shred lettuce. Sprinkle seasonings over meat.
  5. Splash lime juice over meat.
  6. Pour ½ cup or so of juice from crock pot over meat to moisten it up.
  7. Place all on table and let everyone make their own carnitas.
