Savory Shrimp and Green Beans

Ingredients
MORNING INGREDIENTS
- 2 T Lemon Juice
- 1/4 cup Olive Oil
- 1 T Mustard
- 1 tsp Garlic Salt
- 1 tsp Basil
- 1/4 tsp Pepper
- 1 (12 oz) bag Small, Frozen Shrimp
- 1 (1 lb) bag Fresh Green Beans
EVENING INGREDIENTS
- 1 cup Water
- 2 T Butter
- 1 tsp Salt
- 3/4 cup Couscous
- 1/3 cup Lemon Juice
- 1/4 cup Grated Parmesan Cheese
Directions
MORNING DIRECTIONS

In a 9 x 13 pan, mix together seasonings.

Trim top end off green beans.

Add green beans and shrimp to seasonings and stir to coat.

Let shrimp and green beans thaw and marinate in the fridge.
EVENING DIRECTIONS

Preheat griddle to 400.

Put water, butter and salt in pot, cover with lid and bring to a boil.

In the meantime, spray griddle with cooking spray, and place shrimp and beans on hot griddle in a single layer.

While it’s grilling, turn off boiling water and add couscous, lemon juice and Parmesan.

Cover couscous with lid and let it steam for 5 minutes.

While couscous is steaming, remove shrimp from grill after 2 minutes or when it’s just turned pink all the way through.

Continue to grill green beans.

After couscous has steamed for 5 minutes fluff with fork.

Top couscous with shrimp, serving green beans on the side.*
Recipe Notes
*NOTE: Green beans will be crisp-tender. If you like them softer, cook longer than the 10 minutes.
