- 1/2 Small Onion
- 1 Green Bell Pepper
- 1 Red Bell Pepper
- 1 clove Garlic
- 1 lb Lean Ground Beef
- 2 T Chili Powder
- 1 T Cumin
- 1 tsp Garlic Salt
- 1 cup Salsa
- 1 cup Water
- 1 1/4 cup Water
- 1 1/2 cup Instant Rice
- 1 T Lime Juice
- 1 Green Onion
Remove skin from onion; remove top and seeds from peppers. (No need to chop them)
Place all ingredients in the crock pot
Turn on low for 6-9 hours.
Put peppers from the crock pot into a food processor.
Add the 1 1/4 cups water to the processor and pulse until finely chopped.
Add beef (discarding the liquid) to the processor and pulse a few times until meat crumbles.
3.Place beef/pepper mixture in skillet and bring to a boil.
Turn off heat and add rice.
Cover until rice is steamed through. (About 5 minutes)
While rice is steaming, chop green onion.
After rice has steamed add lime juice and stir.
Top with green onion.
